Oh we used to eat soft shell crab in New Orleans- I absolutely loved them! Never ventured to cook them- this looks amazing!

I'm definitely working to gain a few converts...pardon the pun, but too often folks "lump" crab and shellfish with finfish when there is a world of variety and very different sweet and saline flavors to explore

Wow this sounds good! Have you had Korean spicy raw crab (Yangnyeom Gejang)? It uses another type of soft shell crab (blue crab). My mom is a huge fan of crab!

They are certainly on menu’s in Asian restaurants, but where I live is mud crab central, so local tend to prefer these.
